White Bean Dip and Garlic Flatbreads

For the flatbreads:
2 large pita breads
2 Tbsp butter
2 Tbsp crushed garlic
1 Tbsp flat leaf parsley and rosemary (finely chopped)
For the dip:
1 tin cannellini beans
2 garlic cloves, crushed
2 Tbsp olive oil
2 Tbsp lemon juice
3 anchovies (more or less, depending on taste)
3 Tbsp capers
Salt and pepper
2 Tbsp roughly chopped flat leaf parsley
1 Tbsp chopped chives
Method
For the flatbreads &
Take 2 large thin pita breads (Alamir brand are
perfect).
Melt 2 Tbsp butter and combine with 2 Tbsp crushed garlic.
Add 1 Tbsp finely chopped herbs (flat leaf parsley and
rosemary).
Grill one side of the pitas at 180C. Remove from oven, turn to
non-grilled side and spread over butter mixture. Grill for about 5
minutes.
Serve with dip.
For the dip &
Place beans, garlic, olive oil, lemon juice, anchovies,
salt, and pepper in a food processor and blitz.
Roughly chop the capers and the parsley. Stir through bean mixture.
Adjust to your taste with more seasoning.
Garnish with chopped chives and a little more olive oil.
Serve with flatbreads.
