Ingredients 

 Snapper Fillets

 Brioche Sliders

Panko Crumbs

Two Fat Cats Seafood Butter (or make your own herby butter)

 Windsor Blue Cheese

Micro Herbs 

Slice the snapper fillets and crumb using  panko crumbs – FEP– Flour Eggs Panko Crumbs . Deep fry, or shall fry in Canola oil. Cover the brioche sliders in Two Fat Cats Seafood Butter and grill on a hot plate. Place a piece of deep fried snapper on top, garnish with micro herbs and lather liberally with handmade aioli.

 

Handmade Aioli

Eggs

Canola oil

Salt

Pepper

White vinegar

Lemon, juice

Parsley, chopped

Dill, chopped

Capers

Whisk ingredients together.
