Tua Tua soup

Ingredients:

Roux sauce
Minced tuatua
20g butter (melted)
1L milk
1/2 cup flour
Salt and pepper
1 finely chopped onion
Cream to serve

NB: the quantity depends on how big a pot you are making.

Method:

Stir in flour and then add milk to mix.  Cook until the mixture is thick, beating consistently so it doesn't go lumpy.  Add salt and pepper.  Add the minced tuatua and onion.

Cook gently on a low heat - do not let it boil, as the milk will curdle!

Just before serving add some cream.
