Tomato Pasta Sauce

1/4 cup extra virgin olive oil
1 large onion, finely chopped
1 stalk celery, finely sliced
1 carrot, finely chopped
2 cloves garlic, crushed and chopped
1.5kg tomatoes
1 tsp salt and some freshly ground pepper
1 cup fresh basil leaves
Method
Warm the oil in a large saucepan and gently cook the
onion, garlic, celery and carrot until soft.
Add the tomatoes and salt and simmer until tomatoes are tender and
reduced.
Add basil leaves and mouli or blend until smooth.
