Tofu and Shiitake Mushrooms

Tofu and Shiitake Mushrooms

Serves 6

Ingredients
300g Tofu, fried
2 cup Soaked, Dried Shiitake Mushrooms
1/2 cup Ginger, julienned
1/2 cup Chili sliced
1/2 cup Sliced spring onion
1/2 cup Bamboo shoots
1/2 cup Lotus root
3 cups Shiitake Stock (Recipe Below)
2 cups Mixed Herbs (mint, coriander, Vietnamese mint, Thai basil)

Shiitake Stock
2 cups Dried Shiitake Mushrooms
4 cups Water
1/2 cup Soy Sauce

Method
Sauté everything except tofu and shiitake stock
Add shiitake stock and reduce by 1/2 then add  tofu
Finish with mixed herbs, sesame seeds and crispy shallots.
