Tea Smoked Chicken Breast
Ingredients
4 chicken breasts
Marinade
2 tbsp ginger
1 tbsp garlic
3-4 clove
1 cinnamon
1 tbsp Sichuan pepper
1/2 cup honey
Water (enough to cover the chicken breast)
1/4 cup salt
2 tbsp tea (Chinese, green or any other)
For smoking
Manuka wood chips
1 cup brown sugar
1/4 cup tea (loose leaves)
1/4 cup rosemary
1/4 cup jasmine rice
Method
Pre heat the oven at 170C
Dry roast clove, Sichuan, star anise and cinnamon.
Grind to forma powder
Combine all the other ingredients together
Marinade the chicken in the marinade for at least 4 hours or
overnight
Combine all the ingredients for smoking together
