Swedish Style Sardines

Serves 6
Time: 15-20 mins prep (3-4 days curing)

Ingredients
Catch your own sardines/pilchards
10 sardine fillets
1 carrot
2 red onions
1 small horseradish
4 bay leaves
4 strings of thyme
Parsley
Dill
2 tea spoons mustard
10 cloves

Method
Leave sardines in water with a bit of salt overnight.

Liquid
150ml vinegar
150ml water
100ml sugar
2 sliced onions
1 tsp pepper
2 tsp whole pimento

Method
Bring vinegar, water, sugar, onions and half the spices to boil.

Simmer for 5-10 minutes, place sardines, spices and sliced vegetables in a jar -  pour over liquid.
Leave for 3-4 days.
