Strawberry Vanilla Creme Shortbread

Ingredients:

1 sheet of Sweet Short Crust Pastry

250g Strawberries

150ml Cream

1T Caster Sugar

¼ tsp Vanilla Essence

¼ cup Nutella

50ml Cream

Method: 

Preheat oven to 200C. 

Line oven tray with baking paper.

Remove pastry from the freezer and allow to defrost (2 5 mins)

Take a cookie cutter and cut 4 discs from the pastry.

Place the discs on the prepared tray and place in the oven.

Cook for 10 15 minutes until golden brown.

Remove from the oven and set aside to cool.

Place your first measure of cream in a bowl along with the sugar and vanilla essence, whisk until you have soft peaks and add your strawberries, keeping a few to decorate the top of your tower!

Take your nutella, warm in the microwave for 5 6 seconds, remove and add your cream a tsp at a time, stirring until you have a smooth drizzling consistency.

To serve:

Take your discs and using your strawberry vanilla cream create a small tower using pastry then cream. 

Decorate the top with a blob of cream and your reserved strawberries.

Drizzle with your chocolate and devour nom!
