Giant chocolate cake

Bourbon chocolate truffles

50g butter              
2 tablespoons bourbon
100g chocolate       
1 teaspoon cocoa
1 cup icing sugar    
Coconut   

Put Butter and Chocolate in a pan, heat slowly until both have melted.  
Add half a cup of icing sugar and stir until just thick.  
Stir in Bourbon and Cocoa and add enough of icing sugar until stiff  
Roll into balls, big or small, roll in coconut  
Chill


Giant chocolate cake

2 cups of sugar
2 large eggs
1 cup of milk or unsweetened yoghurt
3/4 cups of cocoa powder
200g of butter, softened
2 tsp baking soda
1 1/2 tsp vanilla extract
1/4 tsp salt
3 cups self-raising flour
1 cup boiling hot coffee

Heat oven to 160degC.
Line a 30cm / 12 inch round cake tin with baking paper.
Place all ingredients in the bowl of a food processor and blitz until combined or place ingredients in a mixing bowl and beat with an electric beater.
Pour batter into tin and smooth the top.
Lick the spatula.
Bake for 1 hour or until skewer inserted into the centre comes out clean.
Cool in tin.
Can be frozen!
