Spiced swede patties

This recipe makes a lovely Sunday lunch with a crisp winter salad.

Ingredients:

1 medium swede
1 red onion finely sliced
75g butter or olive oil
Couple cloves garlic minced
1 tsp cumin
1 tsp ground ginger - or use fresh grated (about 1 tbsp)
1 tsp turmeric
2 tsp mustard seeds
Salt and freshly ground black pepper
200g bread crumbs
Olive oil for frying.

Method:

Peel and cube swede then boil in salted water for around 20 minutes.  In the last 5 minutes of cooking add spices and garlic.

Fry off onion then add to mashed swedes.  Let cool before forming into small balls tossed in breadcrumbs.

Heat oil in fry pan, and then fry until golden on both sides.
