400 grams spaghetti
6 slices bacon, finely chopped
2 cloves garlic, crushed and peeled
1/4 cup finely grated Parmesan cheese
3 eggs, well beaten
2 tablespoons toasted breadcrumbs
Cook the spaghetti in plenty of boiling salted water for 10 minutes or until al dente; while cooking, prepare the sauce.
Heat a dash of oil in a frying pan and cook the bacon and whole garlic cloves for 5-6 minutes until the bacon is browned and the garlic fragrant. Discard the garlic.
Beat the Parmesan and eggs together with a seasoning of salt and pepper.
Drain the spaghetti and add immediately to a large serving bowl.
Add the bacon and the egg mixture and toss until the pasta is evenly coated.
Serve sprinkled with toasted breadcrumbs.
