Snapper in Italian Red Sauce

Snapper in Italian Red Sauce

Serves: 4
(This dish will cost less if you catch the snapper!)
 
Ingredients
4 Pieces of Snapper
Olive Oil
1 large onion, chopped
2 garlic gloves, crushed
Can tomatoes
1/2 cup black or green olives
1 teaspoon oregano
1/4 cup white wine
1/2 cup water
Italian flat leaf parsley
Salt & Pepper
 
Method
Heat oil in a deep pan, sauté onion and add garlic and olives.
Add can of tomatoes, wine, water and oregano - simmer on low for 20 minutes until it reduces down. 
Place each snapper fillet in the sauce, cover with a spoon and simmer for a further 5 minutes.
Taste for flavour and add salt and pepper.
Remove from heat and place a lid on top of the pan. 
This will finish the cooking of the fish. 
Before serving sprinkle with flat leaf parsley. 
This dish is lovely served with steamed rice and fresh seasonal vegetables.
