Smoked salmon with avocado, orange and radish - Honey smoked mussels

Serves 4

Ingredients:

4 salmon fillets, pin-boned
2 Tbsp brown sugar
Salt and freshly ground black pepper
Flesh of 2 oranges, diced
1 avocado, diced
4 baby radishes, thinly sliced
2 handfuls watercress
1 Tbsp sweet chilli sauce
Juice of 1 lime
2 tsp extra virgin olive oil

Method:

Sprinkle brown sugar, salt and pepper on salmon (flesh side).

To set up the smoker; line a wok or deep fry pan with tin foil. Place a small handful of woodchips inside, then place a cake rack on top to fit inside the wok/fry pan. Place the salmon on the rack, cover tightly with tinfoil, and place lid on top. Place smoker on top of the element on high heat. Smoke for 7-8 minutes.

To make the dressing, mix sweet chilli, lime juice and olive oil together. Just before serving, toss dressing with the orange, avocado, radish and watercress.

To serve, pile salad onto a plate, and place smoked salmon to the side.

Honey Smoked Mussels

Serves 4 as nibbles

Ingredients:

1.5 - 2 dozen mussels, scrubbed and beards removed
2 Tbsp liquid honey
2 tsp extra virgin olive oil
Salt and freshly ground black pepper

Methods:

Place the clean mussels in a pot with 1/2 cup water, cover and bring water to the boil. Steam mussels, removing them as the shells open. Allow the mussels to cool and remove the half of the shell that does not have the mussel attached to it.

Mix the honey, oil, salt and pepper together, and drizzle a little of this on top of each mussel (still in their half shell).

To set up the smoker; line a wok or deep fry pan with tin foil. Place a small handful of woodchips inside, then place a cake rack on top to fit inside the wok/fry pan. Place the mussels on the rack, cover tightly with tinfoil, and place lid on top. Place smoker on top of the element on medium heat. Smoke for 3-4 minutes.

To serve, pile smoked mussels onto a plate. Optional: sprinkle with finely chopped parsley.
