Smoked Fish Hash

Serves: 4
Preparation time: 30 minutes
Cooking time: 15 minute

Ingredients
250gms smoked fish, I like warehou but kahawai or mullet are great too.
1 finely chopped red onion
2 Tbsp capers
3 Tbsp sour cream
2 Tbsp horseradish sauce
2 tsp Dijon mustard
50 gms butter
2 Tbsp vegetable oil
4 just-cooked large potatoes, grated
1 Tbsp flour
Sour cream to serve

Method
Mix capers, sour cream, horseradish and mustard in medium bowl.
Season with salt and pepper and fold through the fish.
Melt butter with oil in heavy large skillet over medium-high heat.
Mix the potatoes with the flour in a bowl and add onion.
Cook until golden brown and crispy.
Fold through the fish mixture and cook just until heated through.
Season hash to taste with salt and pepper.
Divide among 4 plates and garnish with additional sour cream if needed
