Smoked Chicken and Rice Salad with Spicy Mango Dressing

Smoked chicken and tangy dressing make this rice salad rather special. It's great as a meal or as part of a summer buffet or picnic.

Ingredients
1 smoked chicken breast - sliced
2 stalks celery chopped
1 apple with the skin on chopped
3 cups cold cooked long grain rice
Dressing
1/3 cup crème fraiche
3 Tbsp mango chutney
1 tsp curry powder
2 Tbsp malt vinegar
A handful of chopped parsley

Method
Combine the dressing ingredients.
In a large bowl, place the cold rice, apple, celery, smoked chicken and dressing and mix well, add the chopped parsley and refrigerate till required.
The salad is best made at least half an hour ahead so the rice has a chance to absorb the dressing.
