Sesame Prawn Toasts


A bag of frozen prawns is such a handy thing to have in the freezer. They defrost in minutes when you need to pull together impromptu dishes like this lighter take on the Chinese takeaway favourite, prawn toasts. Simply mix finely chopped prawns with mayonnaise and a little sesame oil, pile onto bread, sprinkle with sesame seeds and bake in the oven until lightly golden and crunchy.

Cook time 15 mins
Makes 24

Ingredients
6 slices white toast bread, crusts removed
250g raw prawn meat, finely chopped
1/4 cup Speedy Mayo or other good-quality mayonnaise
1 tsp sesame oil
salt and ground black pepper
1 tbsp sesame seeds
To garnish
a sprig of chives (optional)

Method
Preheat oven to 180C and line a baking tray with baking paper for easy clean-up.
Cut bread slices into quarters.
Mix prawn meat with mayonnaise, sesame oil and salt and pepper.
Spread onto bread and sprinkle with sesame seeds.
Place on prepared baking tray and bake until toast is golden and crispy (about 15 minutes).
Best enjoyed hot from the oven.
Garnish with chives, if using.
