Sam Mannering's Chocolate and Oat flapjacks

Your friends will hate you for this. It is affectionately known as diabetes slice amongst mine, and is completely addictive. Sitting here writing about it makes me crave some to the extent that is almost painful.
Use whatever chocolate you like - dark, milk, with almonds, hazelnuts or similar.

For the base:
300g brown sugar
250g butter, melted
2 eggs
2 tsp vanilla essence
190g self-raising flour
270g rolled oats

For the filling:
300g chocolate, chopped
400g tin sweetened condensed milk
30g butter
130g walnuts, chopped
2 tsp vanilla essence

Preheat the oven to 170C.

Line a shallow rectangular baking tin or dish with baking paper.

Beat together the sugar and butter until light and fluffy, then beat in the eggs one at a time. Stir in the vanilla essence. Sift in the flour and combine well, followed by the oats.

Press two third of this mixture into the bottom of the lined tin.

Meanwhile, combine all the filling ingredients in a saucepan and slowly melt them together over a low heat. Pour this mixture over the top of the base, spreading it out so that it is evenly distributed.

Sprinkle the remaining base mixture evenly over the top of the filling.

Place in the oven and bake for about 35-40 minutes, until it is lightly browned on top and cooked through. Leave to cool completely before cutting.
