Salted Hazelnut Praline Powder
Makes: approx. 400g

Ingredients
150g hazelnuts
1 cup sugar
1/4 cup water
1 tablespoon flaky sea salt
Method
Roast hazelnuts in oven at 180?C for 8 minutes, remove and
place in a tea towel and rub off the skin.
Place the sugar and water in a saucepan, cook until it becomes a
brown toffee, quickly add the hazelnuts and pour out onto a silpat
or lightly greased foil.
Allow to cool, then using a food processor, process until the
praline resembles coarse breadcrumbs, add salt and give one final
blend.
