Salmon and Papaya with Vietnamese Dressing

Salmon and Papaya with Vietnamese Dressing

Servings: 2
Cooking Time: 15 minutes

Ingredients:
1/4 Green Papaya, julienne cut
1/4 Mango, julienne cut
Handful of Green Salad
100g Fresh Salmon, cut into cubes
1-2 Tbsp Standard flour
Oil for deep fry

Dressing:
1 Lime
2 Tbsp Fish Sauce
2-3 tsp Sugar
Chili, chopped
1 clove garlic, chopped
Deep Fried Shallots or roasted nuts (optional)

Method
Mix all the dressing ingredients in a small bowl and set aside
In a large bowl, mix Green Papaya, Mango and Green Salad and set aside
In a small pot / wok, add oil and heat up to 175-180C.
As soon as oil reach the temperature, coat salmon with flour and deep fry for couple of minutes or until it floats on surface and turns to a golden color
Once the Salmon is cooked, drain the excess oil with kitchen paper and cool down.
Mix Salad, salmon and dressing in a large bowl and serve.
