Rum and Chocolate Christmas Cups

Devised from an original recipe by Donna Hay
Makes about 12

Ingredients
200g crumbed Christmas cake
Couple tablespoons of rum
Zest of 1 orange
200g melted orange flavoured chocolate
Chopped spearmint leaves
Glazed cherries - chopped
Mini paper cases

Method
Into a bowl add cake, rum, zest and stir to combine well.
Mix in 3/4 of the melted chocolate then spoon into cases to half fill.
Refrigerate until set, then top with more melted chocolate.
Sprinkle to decorate with chopped mint leaves and cherries.
Place in decorative boxed and give as sweet treats from your kitchen to friends and family.
