Root Winter Mash
Ingredients
30g butter
50g chopped onion
3 chopped garlic cloves
50g fine chopped leek
100g carrot, swede, turnip, parsnip kumara,
200mls veg or chicken stock
Bouquet Garni (parsley stalks, pepper corns, thyme, bay-leaf)
20mls cream
Few chives finely cut
Seasoning
Method
Heat a pot add the butter and sweat the onion and garlic
then add the peeled and chopped veg
Also add the bouquet garni and cook out (about 25 min) until the
stock is reduced and the veg is mushy.
Season at this point add the cream reduce a little more remove the
bouquet garni and squeeze.
Mash ruff and mix in the chives.
Yum, this mash can go with just about anything.
