Rolled Crepes Filled Smoked Egg Omelette, Avocado and Crayfish

Time: 20 - 30 minutes
Cost: under $10 (without crayfish); approx $15 - $20 (with prawns
and smoked chicken)
Serves: 4
Crepes Ingredients:
2 c flour
2 eggs beaten lightly
1 cup milk
Method:
In a food processor combine the flour and the eggs; add enough milk to make batter the consistency of pouring cream. Season with salt and pepper. Pour into a bowl leave to rest for 20 minutes.
Ladle batter into a heavy based frying pan and cook until crisp on one side then turn over and repeat.
Layer pancakes on a plate.
Avocado Filling:
1 large avocado
2 tablespoons crème fraiche
Juice of a lemon
Mash the avocado with a fork. Fold though crème fraiche and lemon juice.
Omelette:
4 eggs lightly beaten
Salt and pepper
Beat the eggs lightly with a fork. Pour a thin layer into a heated greased small frying pan. Cook pushing the cooked egg to the centre and tipping pan until just cooked. Repeat.
Place a crepe on a board. Place omelette on top, then another crepe.
Spread with avocado and place a slice of crayfish down the middle.
Roll up tightly and chill for 15- 30 minutes.
Slice in half on the diagonal to serve and top with dressed salad leaves or rocket.
