One-egg meringue

Special Lamb Casserole

Preparation Time: 15 - 20 minutes
Cooking time: 1 1/2  -2 hours
Portions 2

4 lamb shoulder chops
1/2 cup plain flour
Salt and pepper
1 good teaspoon Berbere spice
2 onions, chopped
2 cloves garlic, sliced
4 sprigs rosemary
1/2 cup red wine
400 chopped tomatoes or 1 tin chopped tomatoes
2 teaspoons sugar
1/2 cup water

Cut surplus fat from chops. Mix flour, salt and pepper and Berbere spice, and dredge chops in this. Brown in the pan, then place in the casserole dish. Add extra oil to pan if needed and brown onions and garlic until soft. Add rosemary sprigs, red wine and tomatoes. Cook 3 minutes, add sugar, then some of the residual flour mix. Thin with water until the liquid is not too thick. Pour liquid over chops and stir to combine. Bake at 150 degrees for 1 1/2 - 2 hours.

Thicken with the rest of the flour mix if desired.

One Egg Meringue

Preparation Time: 10 minutes
Cooking Time 1 1/2 hours
Cost: $2

White of one egg
1 teacup of sugar (equivalent to 170ml)
1 large teaspoon vinegar
1 teaspoon baking powder
Cream

Whip egg, sugar and vinegar, then add baking powder.
Place on a cold, greased tray. Use large spoonfuls for dessert meringues and tiny spoonfuls or pipe small shapes for coffee treats.
Cook in the middle of the oven preheated to 150-200 degrees C.
Turn off heat when meringues are placed in the oven and leave for 1 1/2  hours.
When cooked join with whipped cream.


Butterscotch Sauce

Preparation Time: 3 minutes
Cooking Time:  4 minutes
Portion : Approximately 1 1/2 cups

125g brown sugar
50g butter
2 tablespoon golden syrup
2 tablespoon cream

Heat sugar, butter, syrup in a double boiler until sugar is dissolved. Add cream.
Stir well together.
Sauce will thicken as it cools.


Cinnamon Oysters

Preparation Time: 10 minutes
Cooking Time: 11 minutes
Portions: 24

4 eggs
175g sugar
2 dessertspoons golden syrup
2 teaspoons cinnamon
1 teaspoon ginger
1 teaspoon baking powder
125g flour

Beat eggs and sugar until creamy. Add syrup and beat again. Add dry ingredients.
Put into greased patty tins and bake for 11 minutes at 200 degrees C .
Slit when cold and fill with whipped cream.


Rocky Mallow

Preparation Time: 10 minutes base, 10 minutes mallow
Cooking time: 15 minutes
Portions:  24-30

175g butter, melted
2  1/2 Weetbix (crushed finely)
1 cup flour
1 cup coconut
3/4 cup sugar
2 tablespoons cocoa
1 teaspoon baking powder

Pour the melted butter over the dry ingredients and mix well. Press into a 23cm tin and bake for 15 minutes in a moderate oven.

2 dessertspoons gelatine
1 cup boiling water
2 cups sugar
Few drops vanilla essence
Colouring - optional

Dissolve gelatine in boiling water, add sugar and vanilla essence. Beat until thick and fluffy adding the colouring slowly until you get the colour desired. Pour over cooled base. Allow to set in the tin before cutting.
