Quinoa with Mixed Sprouts and Peas

$2.25 a day meal challenge

Serves with either wild rice, toasted peanuts or a can of chickpeas

Serves 4 - 6 and cost less than $1.50 per person and is even cheaper if you do your own sprouting&+ grow you own herbs&

Ingredients
1 cup quinoa
1 1/2 to 2 cups water
Little salt
1 cup sprouted mixed peas
1 cup mixed bean sprouts
Chopped fresh basil
Either a can of chickpeas drained or
1 cup toasted peanuts
Black pepper
Olive oil
1 tbsp basil pesto
Zest and juice of 1 lemon

Method
Rinse quinoa in cold water to remove bitterness from seeds.
Place quinoa and salt into a pot with water and bring to boil.
Simmer gently until the water has almost evaporated.
Leave to rest with lid on for around 10 minutes then fluff up with a fork. Add sprouts to quinoa.
Mix together, lemon juice, zest, olive oil and pesto in a jar.
Fork through above, garnished with chopped basil and black pepper
If you have to eat this meal after meal, then don't worry because all your protein, carb, vitamin and minerals will be covered
