Quinoa and Shrimp Stuffed Avocado Salad

Quinoa and Shrimp Stuffed Avocado Salad with Ginger Cumin Dressing

Serves 2-4 people
Preparation time 15-20  min

Ingredients
50g quinoa
1 diced plum
2 mandarin
2 radish
1 cup cooked shrimp
1 tbsp chopped jalapeno
1 small onion
2 avocado
1 tsp lemon zest
Ginger cumin dressing
2 tbsp chopped ginger
1 tbsp honey
1 tbsp orange juice or lemon juice 
1/4 tsp paprika 
1/4 tsp cumin powder
1/4 tsp salt 
1/4 tsp pepper
1/4 cup coriander

Method 
For dressing: combine all ingredients together in the blender.
Soak and rinse quinoa well to remove the bitterness and cook it in double amount of water and pinch of salt.
Once cooked spread on sheet tray.
Remove avocado from the skin and chop it, save the skin.
Combine mandarin, plums, onion,  avocado, jalapeno, radish, shrimp, quinoa and the dressing.
Once combine put in the avocado shell and serve.
