Queen Berry Trifle

Ingredients
1 large or 2 small jam rolled sponges
Tbsp or more of strawberry or raspberry jam
1 pkt Hansell's strawberry mousse
1 cup milk
Sherry or fruit liquor
1 cup of fresh or frozen mixed berries
600ml pre-made custard
300ml cream
1 cup fruit yoghurt
Garnish with additional fresh berries and Roasted almonds + a few mint leaves
Large crystal or glass bowl

Method
Make up mousse to directions on back of packet using milk.
Soak fruit in fruit liquor or sherry for several hours.
Whip cream until soft peaks form.
Fold in yoghurt.
Cut sponge roll into slices and spread if desired with extra fruit jam.
Line bottom and sides of serving dish with sliced roll.
Sprinkle a few of the soaked berries over top.
Spoon over half the mousse and half the custard pushing a knife down into sponge to let mousse and custard soak through.
Repeat layering with remaining ingredients.
Top with yoghurt cream.
Garnish with berries and roasted almonds and the odd sprig of mint.
