1 pumpkin - diced
1 Tbsp butter
1 tsp ground cumin
2 kaffir lime leaves - left whole and removed, optional.
1 litre of stock or water or mixture
Salt and pepper to taste
Heat a saucepan on a medium heat.
Add the butter and diced pumpkin.
Let this cook for 3 minutes to soften slightly.
Add the cumin and lime leaves.
Stir to combine then add the stock or water.
Let the pumpkin cook until soft.
Remove from heat and blend.
Season to taste and serve.
