Serves - depends on how thick you slice it! Roughly 10 slices

1 cup chopped walnuts or pecans (optional) - toasted until lightly browned
3 1/2 cups flour
2 cups dark brown sugar
2/3 cup white sugar
2 tsp baking soda
1 tsp salt
1 tsp ground nutmeg
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
2 cups pumpkin puree
1 cup vegetable oil
2/3 cup coconut milk
2/3 cup flaked coconut
Preheat oven to 175C. Grease and flour two 8 x 4 inch loaf pans.
Take a large bowl and stir together the flour, brown sugar, white sugar, baking soda, salt, nutmeg, cinnamon and ginger.
Add the pumpkin puree, oil, and coconut milk, and mix until all of the flour is absorbed. Fold in the flaked coconut and toasted walnuts. Divide the batter evenly between the prepared pans.
Bake for 1 hour and 15 minutes in the preheated oven, or until a toothpick inserted in the centre comes out clean.
Remove from oven and wrap loaves tightly with foil. Set aside for a few minutes; this will allow them to steam.
Remove foil, and turn out onto a cooling rack. Cover loosely with the foil and let cool.
