Prune, Walnut and Banana Breakfast Loaf

I love a good slice of this for breakfast - it makes a great start to the day with a cup of coffee or milk.
Slice a piece off and breakfast is served! It's nice slightly warmed up in the microwave (and with a little spread of butter!).

Prep time: 15 min
Cook time: 45 Minutes
Serves 8

1 cup chopped prunes
1 teaspoon baking soda 
1/2 cup boiling water
50g butter, softened
1 cup brown sugar
1 teaspoon vanilla essence
1 beaten egg
2 mashed bananas
1 cup chopped walnuts
1 teaspoon baking powder
2 cups plain flour 
1/2 teaspoon mixed spice

Preheat oven to 180C.
Put prunes and baking soda in a bowl.
Pour over boiling water and mash up prunes.
Beat butter with sugar and vanilla until thick, light and creamy, then beat in egg.
Mix in mashed banana, nuts and mashed prunes.
Sift flour, baking powder and mixed spice together.
Add to wet mixture and fold the two mixtures together until well combined. Do not over-mix.
Spoon batter into a greased loaf tin and roughly smooth out the top.
Bake for 45 minutes or until loaf springs back when lightly touched.
Leave in the tin for 10 minutes before turning out.
Tip: the loaf freezes well.
