Pork Sausage Quiche
A simple quiche that is quick to make, then you can relax while
it is cooking.
Here is a lighter meal to take along to a lunch or BBQ.
Remember to also take some of your homemade fresh sausages for your
friends to try!
Serves 4
Ingredients
4 sheets filo pastry
vegetable oil for brushing
400g pork, sage & fennel sausages, cut in pieces
100g onion, diced
3 vine-ripened tomatoes, quartered and deseeded
2 spring onions, sliced
3 eggs
200ml milk
salt and pepper to taste
Method
Preheat the oven to 150C.
Lay 1 filo sheet on a board and oil lightly; repeat with the other
3 sheets.
Lightly oil a 24cm flan dish and line it with the filo
sheets.
Fold any overhanging filo back into the dish.
Heat a frying pan to medium and sauté the sausages in a
little oil until lightly brown and just cooked through.
Remove the sausages from the pan.
Sauté the onion in the pan until softened.
Place the sausages and sautéed onion in the filo-lined pie
dish, then add the tomato and spring onions.
Mix the eggs and milk until combined, season to taste and pour into
the pie dish to just below the rim.
Bake in the oven at until the egg mixture is set (about 45
minutes-1 hour).
Serve hot.
