Poached Chicken Salad

Serves one $10.62

100g poached chicken breast
80g lettuce
50g cabbage
40g carrot - finely sliced
40g daikon - finely sliced
30g wonton skins - sliced into noodles then deep fried.
3 basil leaves - shredded
1 Tbsp coriander - sliced
2 Tbsp chilli mint dressing
Salt and pepper to taste
1 red chilli - finely sliced
1 tsp black sesame seeds
1 Tbsp lime juice

Combine the chicken, cabbage, lettuce, daikon and fresh herbs in a bowl.
Add the dressing and season.
Garnish with crisp wontons and sesame seeds.

Chilli-mint Dressing

75g palm sugar
100ml white wine vinegar
40ml fish sauce
2 garlic cloves- minced
1 Tbsp mint - finely sliced
1 Tbsp coriander - finely sliced
2 red chillies - finely diced

Combine in a small bowl then drizzle over salad and combine.
