Plum, Vanilla, Orange and Manuka Honey Plum Compote

This is a really easy recipe that can use over-ripened fruits. It's ideal with yoghurt, rice pudding or as scone topping.

Ingredients
1 kg plums, pitted and quartered
100g good Manuka honey
Zest and juice of 1 orange
1 fresh vanilla pod split in 1/2 and scraped

Method
In a pot combine all of the ingredients apart from the plums and add 1 litre water.
Bring to a simmer and cook for 20 minutes, or until it's reduced by half.
Then add your plums and reduce until you obtain a nice thick compote, refrigerate and use.
If needed, add a squeeze of lemon.

Plum Chutney

Ingredients
1 kg plum, pitted and quartered
1 onion, diced
1 whole chilli
100ml red wine vinegar

Method
Sweat off I diced onion, 1 whole chilli chopped and deglaze with 100ml red wine vinegar.
Reduce by half then add all the ingredients, apart from the plums and cook for 20minutes.
Then add your plums and reduce until you obtain a nice thick chutney, refrigerate and use.
Nice with blue cheese or BBQ pork!
