Plum Jam Roly Poly

Serves 4-6
Time: 1 hour

Ingredients
2 cups flour
2 teaspoons baking powder
1 tablespoon castor sugar
1/4 teaspoon  salt
zest of 1 lemon
150g butter
120ml milk
200g plum jam
1 cup boiling water
1 cup white sugar

Method
Preheat oven to 180C
Place all dry ingredients into food processor, add lemon zest and cubed butter.
Pulse until mixture resembles bread crumbs.
Place into mixing bowl stir in milk so mixture is soft but not sloppy.
On a floured bench roll out dough to a rectangle 20x30cm.
Spread over the plum jam.
Roll the dough like a Swiss roll.
Cut into six even sized pieces.
Place them into a well greased baking dish edge side down.
In a jug mix boiling water and sugar to make a syrup.
Gently pour hot syrup over pudding.
Cover dish with foil and bake for 30 minutes, remove foil and bake for a further 15 minutes.
Serve with custard and whipped cream.
