Pho Ga

Serves 4

Ingredients
2L Chicken Stock
6 Star Anise
6 Cardamom Pods
5 Chinese Cardamom Pods
2 Cassia Bark
120g Lemongrass
100g Ginger
1 tsp Salt
40ml Fish Sauce
10g Castor Sugar
600g Boneless, skinless chicken thigh

To Garnish
Coriander
Vietnamese mint
Thai basil
1 Banana shallot
1 Spring onion
100g Rice noodles (cooked)

Method
Put all ingredients into a pot except chicken thigh.
Bring to a low simmer for 20 minutes with the lid on.
Poach chicken thigh for a further 7 minutes.
Adjust seasoning if required.
Garnish with herbs, sliced shallot, and spring onion.
