DRESSINGS

Basic Mayonnaise

Ingredients

2-3 egg yolks
1 teaspoon mustard of preference
1 tablespoon white wine vinegar or lemon juice
3/4 olive oil
Lemon pepper and salt to taste

Method

Bring eggs up to room temperature and crack yolks into a spotless bowl. This is very important as any residue of grease will affect making of mayonnaise
Add mustard, lemon juice or vinegar and seasoning. Mix together
slowly add oil drip by drip, continuously whisking. This can be done in a food processor until thick. Let it down with water or lemon juice if needed
if it splits don't despair - just start again with a fresh egg yolk and add in split mix, drip by drip. When finished this mayo must be refrigerated

Tartare sauce version 1

1 measure of mayo
1 hard boiled egg shelled and finely chopped
1/4 teaspoon anchovy essence
Mix together

Tartare sauce version 2

1 measure of mayo
1 anchovy finely chopped or 1/6 teaspoon anchovy essence
2 pickled gherkins finely chopped
1 teaspoon chopped capers
1teaspoon chopped parsley

Mix all together - both versions are excellent with fish grilled or fried

Caesar Dressing

1 measure of mayo
2 teaspoons grated parmesan
2 anchovies or 1/4 anchovy paste
1/4 teaspoon garlic puree
1/4 teaspoon Worcester sauce

Mix all ingredients together - a great salad dressing!

 

Vinaigrettes

Basic Vinaigrette

Ingredients

4 tablespoons white wine or cider vinegar
1 teaspoon wholegrain mustard
2/3 cup olive oil
Sea salt
Pepper freshly ground

Mix together vinegar, mustard and seasoning. Slowly add oil whisking continually to produce an emulsion or put all in a screw top jar and shake thoroughly

Raspberry dressing

Ingredients

2 tablespoons berry puree
1/3 cup walnut oil or peanut oil 
1/2 teaspoon caster sugar
Pinch of salt and sugar
2 tablespoons raspberry vinegar or ver juice

Mix together puree, sugar, vinegar and seasoning slowly add oil whilst whisking till an emulsion forms


Chilli, Soy and Lime Dressing

Ingredients

1 tablespoon garlic puree
1 teaspoon sweet chilli
1/4 cup soy sauce
2 tablespoons lime juice or cordial
1/2 cup peanut oil or olive oil
1 teaspoon sesame oil
Salt and pepper to taste

Mix together garlic, chili, soy, lime juice, and seasoning
Add olive oil drip by drip till all combined then add sesame oil and adjust seasoning if needed

Fat Free Dressing

Ingredients

4 tablespoons balsamic vinegar
1 teaspoon Manuka honey
1 teaspoon wholegrain mustard
 Pepper to taste
1/2 teaspoon garlic puree
Water drained from a tin of butter beans

Mix together vinegar, honey, mustard, garlic and pepper slowly add water whisking till emulsion is formed - adjust seasoning
