This is my mothers easy recipe for shortbread along with the addition of Fresh As amazing freeze dried passionfruit powder which gives a wonderful aroma and flavour. The shortbread will start to darken at the end of cooking because of the fruit, so keep an eye on them and remove if they become too brown.
100g icing sugar
15g Fresh As passionfruit powder, available from specialty food stores
250g butter, cut into cubes
Heat the oven to 150C.
Place all the ingredients in a food processor and process until well mixed.
Tip onto a clean surface and knead until you have a pliable dough. Form the dough into a 32cm x 8cm x 2cm rectangle, wrap in glad warp and refrigerate for at least 30 minutes.
Slice into 1 cm fingers. Place on a baking tray and prick each with a fork.
Bake for 35-40 minutes. Cool on a wire rack and store in an airtight container.
