1 tsp yellow mustard seeds
1 tsp coriander seeds
4 Tbsp grainy mustard
Zest and juice of 1 lime or lemon
2 cloves garlic - finely minced
1 1/2 cup sugar - I like to use raw sugar
1 litre white wine vinegar
Couple of bay leaves
1.5 kg mixed dried fruits, like peaches, prunes, pears, nectarines
2 cups water
Into a large pot add, vinegar, sugar and water and bring to the boil.
Add fruit, mustard, seeds, lemon or lime juice and garlic and simmer for around 30 minutes or until fruits are tender.
Spoon into sterilized jars.
Will last up to 3 months in the fridge.
Also makes for great gifts.
