Preparation time 10 minutes
Cooking time 2 hours

Ingredients
1 large carrot, chopped
2 stalks of celery, chopped
1 large onion, chopped
2 cloves garlic
1 ham hock or lamb shank
2 bay leaves
1 cup dried haricot beans
1 tablespoon dried mixed herbs
2 bay leaves
6 black pepper corns
3 litres of cold water
1 tin chopped tomatoes in juice
1/4 cabbage roughly chopped
1 leek chopped

Method
Put carrot, celery, onion, garlic, ham hock, bay leaves, beans, mixed herbs, bay leaves, pepper corns, garlic and water in a large saucepan.
Boil gently for an hour and then take out the hock or shank and shred meat and put back into soup.
Add tomatoes, cabbage, leeks and another litre of water. 
Simmer for a further half hour.
