Miles Davis' Lamb Kofta Kebab

Lamb Kofta Kebab

(makes 4)




½ kg lamb mince

½ tsp ground cardamom

1 tsp chili powder

1 onion

1 grated carrot

1 finely sliced tomato

Diced cos or iceberg lettuce (or other greens to taste)


Chili sauce

Mint yoghurt sauce (either shop bought or made with plain yoghurt and fresh mint or mint concentrate)

Lebanese bread for wraps

Salt & pepper to taste

Tin foil


Finely chop 1 quarter of the onion (slice rest of onion and put aside for later inclusion) add to the lamb mince, cardamom, chili, salt & pepper and mix well by hand (or fancy blender if you have one and don’t like getting your hands dirty)

Shape mince into 4 equal-sized sausage shaped patties

Fry or grill the patties turning occasionally

Place Lebanese bread on equal sized sheet of baking foil

Spread hummus over bread

In centre of bread (vertically) add lettuce, carrot, tomato, diced onion

Cut lamb kofta in half and place on top of salad

Cover in chili sauce and yoghurt dip

Fold in from sides then tuck up the bottom and wrap in the tin foil

Place in pre-heated dry pan cook for 30 second each side then serve
