Middle Eastern Salad

Serves 6

Ingredients
4 Tomatoes
Cucumber, preferably 3 little Lebanese if not 1/2 a telegraph
A handful each of Italian parsley and chopped mint
2 Spring onions chopped or a small red onion sliced thinly
Juice from 1/2 lemon
3 tablespoons of extra virgin olive oil
Flaky salt to taste
 
Method
Cut tomatoes and cucumber into 1cm cubes
Add chopped herbs, lemon, oil, and salt. Toss together.

Additions (Optional):
Croutons
Olives
Crumbled Feta
Chopped fresh chili
A drizzle of tahini
