Marinated Lamb Salad by MKR's Kimberley and Brooke

Good Morning on TV ONE and TVNZ OnDemand.

1 lamb fillet or lamb loin ~ 80g


For the marinade:

1 spring onion, thinly sliced

1 Tb fresh mint, sliced

1Tb fresh coriander, sliced

5 pieces pickled ginger

Red chilli x1

Juice and zest of 2 limes

2 Tb soy sauce


To serve:

Handful mixed lettuce

Sesame oil ~2Tb

1 tsp toasted sesame seeds

Toasted cashew nuts ~15g



1.Trim lamb of any silver skin and excess fat

2. Heat a frying pan and sear lamb in a small amount of oil, till Med Rare, rest the meat.

3. Place marinade ingredients into a small bowl. Add the whole piece of lamb and marinate for up to an hour.

4. Add a small amount of sesame oil to the marinade to create a dressing. Gently dress the salad.

5. To serve, slice the lamb thinly and fan out. Garnish with the dressed salad and toasted seeds and cashew nuts.
