Marinated Chicken Skewers on Ginger Rice

Ingredients
800g boneless chicken thighs
1 tbsp turmeric
2 stalks of lemongrass - finely sliced then pounded
1 tsp salt
1 tbsp sugar
1/2 tsp black pepper
1/2 tsp five spices
2 kaffir lime leaves - optional
3 cloves of garlic - pounded
2 shallots - pounded
1 tsp chilli flakes
1 tsp sesame oil
1 tbsp fish sauce
8 wooded skewers - soaked in water
Method
Place the chicken thighs into a shallow dish. Sprinkle
over the salt, pepper, sugar and five spices. Rub into
chicken.
Pound the garlic, shallots, lemongrass and chilli. Add the
turmeric, oil and fish sauce and combine.
Put on some gloves and massage this mix into the chicken, cover and
let marinate for at least 30 minutes.
On a medium heat grill for 4 minutes each side or until cooked
through to your liking.
