Mange Tout and Chilli Beef

Serves 4

Ingredients
450g Beef fillet (sliced)
1 tsp cornflour
2 tsp light soy sauce
2 tsp Shaoxing rice wine (or dry sherry)
2 tsp sesame oil
Salt and pepper
2 red chillies
2 tbsp peanut oil
225g mange tout
150ml chicken stock or water
3 tbsp oyster sauce

Method
Put the beef, cornflour, soy sauce, rice wine, sesame oil, 1/2 tsp salt, 1/4 tsp pepper in a bowl, mix and leave to marinate for 15 min. Slice chillies.
Heat a large frying pan, add peanut oil and when very hot stir fry the beef for 3 minutes. Remove and drain in a sieve, reserving oil.
Wipe pan clean, then reheat and return 1 tbsp drained oil.
When it is hot stir fry the chillies and mange tout for 2 minutes.
Add chicken stock and oyster sauce and bring to boil.
Return the cooked beef to the pan and stir well. Serve on rice.
