Cake
150g butter, softened
50g white sugar
2 egg yolks
2 cups self-raising flour
Raspberry Jam
Meringue
110g sugar
2 egg whites
1 1/2 cups coconut
Method
Cream butter and sugar, then add egg yolks and beat
well. Stir in sifted flour.
Press mixture into a 17cm x 23cm lined baking tray, spread jam over
mixture.
To make meringue, beat egg whites and sugar until thick then fold
in coconut. Spread the meringue on top of the jam.
Bake at 180C for 20- 25mins.
