Little Maple Walnut Cookies

These cute little gluten-free cookies were inspired by my favourite ice-cream flavour – maple walnut!

Makes 22-24 little cookies          Prep time: 10 minutes          Cook time: 18-20 minutes

 

Ingredients: 

2 cups ground almonds

½ cup shredded or desiccated coconut

1 teaspoon ground cinnamon

50g melted butter

½ cup maple syrup

3-4 tablespoons milk

24 walnut halves

 

Method:

  1. Preheat oven to 170ºC (150ºC fanbake). Line a baking tray with baking paper. In a large mixing bowl, mix all ingredients except walnuts together until well combined.

 

  1. Roll tablespoonsful of mixture into balls and place on prepared baking tray. Flatten slightly with the back of a wet teaspoon and push a walnut half in.

 

  1. Bake for 18–20 minutes until light golden.

 

  1. Remove and allow to cool completely on a wire rack. These cookies will keep for up to a week in an airtight container.
