Lentil Salad

Lentil Salad

Cooking time : 10 - 15 min
Serves - 2-4 people

Ingredients
2 cups lentil ( puy ) 
1/2 cup chop onion 
1/2 cup chopped tomato 
1/2 cup chopped cucumber
2 tbsp capers
2 tbsp goat cheese
2 tbsp chopped walnut 
1/4 cup chop coriander 
1/4 cup chopped mint
Dressing
1/3 cup avocado oil 
1/4 cup apple cider vinegar
1 tbsp honey
2 tsp salt
2 tsp pepper
1 tsp cumin powder
1 tsp coriander powder 
1/4 tsp cayenne pepper 
1/4 tsp cinnamon powder

Method 
Soak lentil for 10-15 min.
Cook in water till lentils are cooked.
Take one cup of lentil and roast it in the oven with oil salt,  pepper and cayenne pepper 
Combine cucumber, tomato, onion, caper, cheese, mint and coriander.

For dressing: add all the ingredients together and blend.
Mix the dressing with the salad and serve.
