Lemon Meringue Slice

Base
1 pkt malt biscuits, finely crushed
1 tbsp caster sugar
1 tsp cinnamon
175 g butter, melted

Filling
1 tin of condensed milk
1/2 cup of lemon juice
grated rind of 2 lemons
2 egg yolks

Top
2 egg whites 
1/4 cup of caster sugar

Method

Base:
Preheat oven to 180C
In a bowl place malt biscuits, sugar, and cinnamon. Mix in melted butter. Press into lined swiss roll tin.

Filling:
Mix all ingredients together until well combined and pour over base mixture.

Top:
Beat egg whites until light and fluffy, slowly adding caster sugar until it forms soft peaks.
Spread carefully over lemon mixture.

Bake for 30 minutes. Cool before cutting.
