Lemon and Passionfruit Loaf

Ingredients
4 eggs
1 1/4 cup of caster sugar 
1/4  tsp salt
1 2/3 cup of plain flour
1/2 tsp of baking powder
finely grated zest of 4 lemons
1/2 cup passion fruit yoghurt
100g butter melted and cooled

Method
Preheat oven to 180C.
Lightly grease a large loaf tin with oil spray and line with baking paper.
Beat eggs in an electric mixer for 1 minute.
Add sugar and salt and continue to beat until thick and creamy.
Fold in sifted flour and baking powder, then add lemon zest, yoghurt, and melted butter and mix to combine.
Pour into the tin and bake in the oven for 45 minutes.

Icing
Ingredients
100g icing sugar
1 tsp butter, melted
1 Tbsp passion fruit pulp

Method
Combine icing sugar, butter, and passion fruit pulp, stir until smooth and runny.
Spread icing over cold loaf.
