Leek, Mushroom and Blue Cheese Tarte

Ingredients:
1 blind bake savoury tarte base
1 leek, green removed, finely sliced and washed
6 large button mushrooms, washed and sliced
1/2 onion, finely sliced
200g Kikorangi or any other blue cheese, crumbled. If you don't
like blue cheese use a brie.
5 eggs, shells removed
200ml cream
50ml milk
Salt and pepper
Pinch nutmeg
2 Tbsp chopped parsley
3 Tbsp oil
Method
In a pan separately sweat of the onion, leeks and
mushrooms.
Drain any excess liquid then mix them thoroughly.
Season to taste.
In a bowl, whisk the eggs, then add the milk and cream and a pinch
of nutmeg and the chopped parsley.
Put the leek mix at the base of your precooked tarte, pour the egg
mix on top.
Scatter all over the top of the crumbled blue cheese and bake in an
oven (fan bake 180C for about 30 - 45 minutes or until the centre
of tarte is just set.)
Enjoy with a nice peppery rocket or watercress salad.
