Leek and Brie Tart

Ingredients
1sheet short savoury pastry or puff pastry
1 leek, the white part, cut into cubes
1 onion, peeled and diced
4 whole eggs
1/2 litre cream
Salt and pepper to taste
200 grams brie, sliced

Method
In a pan, sauté off the onion and leek until semi-cooked then cool aside.
Line a tart mould with the pastry and blind bake half way.
In a bowl, mix the cream and eggs together.
Season to taste then add the leek.
Mix thoroughly and pour into pre-baked pastry.
Then arrange the slices of brie on top as one per slice of tart.
Bake in a pre-heated oven at 180C for about 15 to 20 minutes or until the mix has set.
Rest for a good 10 minutes.
Slice and serve with a salad.
